Here's my spicy seafood version of it:
SPICY SEAFOOD FRA DIAVOLO
Ingredients:
3-4 Tbsp Olive Oil
1 Can (28 oz) Crushed Tomatoes
1 Can (10 oz) Clam (strain & save the clam juice)
1/2 Cup Clam Juice
1/2 Cup fresh Parsley
1 Tbsp Dried Basil (if you can find fresh basil, probably 1/2 cup)
2-3 Tbsp Sea Salt (or 1 tbsp Iodized Salt) *sea salt coarse, so it's less salty
2 Cloves Garlic Minced
1/2 chopped Onions
2-3 Tbsp Crushed Red Pepper (Optional, or by preference)
1 pinch Blk Pepper
1/2 Bag Shrimp
10 Mussels (as much as you want, shell on is optional, I took it off)
1/2 Cup Mozzarella (top it off at the end, I used the mix bag of various cheese,
most recipes say Parmesan cheese)
Noodles:
1 Box Penne Noodles
Directions
1) Put olive oil in a pot, place on medium heat. Then sautee onions and garlic in olive oil.
2) Strain clams, and save 1/2 cup of clam juice.
2) After the onions and garlic turn a golden brown, add sea salt, crushed red peppers, clams, and mussels. Mix and cover for 2 mins.
3) Stir and add in clam juice, crushed tomatoes, and more blk pepper/crushed red pepper if you'd like. Add sea salt to taste if necessary. Stir all ings, cover and let simmer for 5-10 mins.
4) In a separate frying pan, sautee shrimp in olive oil for about 2-3 mins. You don't want to overcook the shrimp, because it will shrink. After the shrimp is cooked, add it to the Fra Diavolo sauce you've just made, and stir in.
5) Add parsley and basil, stir, and let cook for another 5 mins.
6) Top it with Mozzarella cheese, and serve on top of noodles of your choice! I used Penne noodles. :)
*If you don't know how to cook noodles, just fill a pot 1/2 way with water, add the noodles, pour about 1/2 cup of oil, and add a pinch of salt. Let it cook for 20-30mins, or until noodles become soft. Rinse and strain, and it's ready to eat! :)
Enjoy! I was impressed at how it turned out, it was really delicious! I added this to my recipe book! It's definitely a keeper. ;)
