Corn Soup Recipe

Corn Soup Recipe


Ingredients:
2-3 Cans Corn
3-4 Cups Chopped Chicken (uncooked)
2 Qts Water
1 can Coconut Milk
1/2 onions chopped
Black Pepper (as much/little as you want)
1-2 Tablespoon Salt (or to taste)
Aji (to taste, I usually add 1 teaspoon, not too much)
1/2 Cup Cold water MIXED with 1/4 Cup Flour or Corn Starch (this is to make it thick)

1) Boil 2 qts water on med/high heat, add chopped chicken, and boil until chicken is cooked.. by cooking the uncooked chicken, this will bring out the chicken broth.. it'll probably take 20-30 mins for the chicken to fully cook..

2) After chicken is cooked, add chopped onions, salt, aji, pepper, and corn.. cover and turn heat down to low/medium.. let onions cook/get soft.. maybe 10-15 mins..

3) Add coconut milk at the end.. and stir in, and turn the heat on high.. add (corn starch + water mixture) LAST, stirring it into the soup.. this will thicken the soup.. it'll take 5-10 minutes to see the soup thicken in consistency.

4) Turn off heat, remove from hot stovetop, and let sit and cool down for about 20 minutes.

IMPORTANT NOTE: Since it is made with coconut milk, it WILL spoil quickly, so it's best eaten on the same day, and if you're going to refrigerate leftovers.. 1 day should be the max, anything after 2 days or more may be spoiled! Just a safety note..

never had corn soup before, but what's it in sounds yummy!! maybe i'll take a stab at making it!! YUM
